Fijne Nederlandse keuken met verrassend resultaat,

In the heart of Amsterdam in two stepped-gable buildings were built in 1614. The restoration has done wonders. Everything is taken care of down to the last detail, and that is what they notice about the influx of many foreign guests and business people. Yves van der Hoff brings the international style in terms of cuisine but mainly uses Dutch and regional products. He calls it “the fine Dutch cuisine.” Simple, tasty, and fine. especially the total taste picture, which is striking here. You continue to taste each ingredient individually.

The sauces are also of a high standard, as are the caissons of each dish. This gives a surprising result. This is much more than a tourist restaurant. The wine list is excellent, with items from all over the world. The combinations are, without exception, of a high level, with filling wines and the rich taste of the dish. Owner and host Jim van der Hoff (father of) is a great enthusiast, and you can see that on the wine list. Control and so on here, with a lot of attention to the guests. Quality, location, and experience all contribute to the higher pricing.

Very good Standard

The authentic interior of these two buildings with stepped gables, dating back to 1614, has stood the test of time, retaining features such as a warm open hearth with matching tiles. In stark contrast with the decor, the food is modern down to the last detail. The young chef works mainly with Dutch ingredients and has a well-deserved reputation.

De Silveren Spiegel 14.5/20

Near Central Station is the hidden gem De Silveren Spiegel, run by the couple Van der Hoff, their son, and executive chef Yves. In the 17th-century intimate home house, several refined Dutch dishes are on the table. We taste beautiful amuses, wild gourmets and smoked, wild duck from the Netherlands, and turnips in salt crust, with chicory compote, egg yolk, hazelnut, and mushroom currant juice.

The dessert with licorice mousse is soft, sweet, crunchy, fluffy, and salty—a perfect harmony. We praise the young, talented chef who cooked excellently. Add to this the timing of the service—being well-informed about the culinary level as well as the area of the wine but also aware of the history of the building—and you have a great evening.
